Delicious Pumpkin Pancakes!

I love pumpkin flavored food! Coffee, desserts, breakfast foods-if it has pumpkin in it, chances are I will eat it. This is one of my favorite recipes to make during the holiday season. Actually, during the winter season in general! And they are so good, you don't even need syrup or butter with them to eat. They are almost like pumpkin cake. Almost. They are definitely delicious with butter and syrup, and sometimes I make them with whipped cream.

Here is what you will need:


  • 1 1/2 cups milk


Everything you will need minus the egg. It didn't want to be photographed. It's shy.



    In a bowl, mix together the milk, pumpkin, egg, oil, vanilla and brown sugar. I added the brown sugar to the wet ingrediants instead of the dry because it tends to clump up and not dissolve properly when added to the wet mixture.  Combine the flour, baking powder, baking soda, pumpkin spice, cinnamon, ginger and salt in a separate bowl. Stir into the pumpkin mixture just enough to combine. Don't overmix or else the pancakes won't be as fluffy.



The batter will be super thick, almost like mousse.

Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Use the back of the spoon to slightly spread the batter out.




 Brown on both sides and serve hot with syrup, butter, or whipped cream. They are so good you can eat them without anything! Resist the urge to eat the whole stack. These freeze really well. Just stack on top of each other with wax paper inbetween, and heat up in the microwave for thirty seconds.

Thirty Days Day 08- Three Inspirational Quotes

I have a few quotes that I have been trying to live by lately. Sometimes I have to repeat them to myself on days I want to give up, or am tired, or being lazy. Here is the first one:

 
 
This is something I try to remember so much, it is the screensaver for my phone. And I look at that constantly, so I can't forget this one. Especially days I get home and want to do nothing but watch a marathon of Gilmore Girls on DVD instead of doing homework, or working on my jewelry (which can be found at the link above next to the About Me section). As far as I know, it has an unknown author, but if anyone knows it let me know so I can credit them!
 
The next one is one from Albert Einstein:
 
 
 
 
I liked this one so much when I first read it that I printed out and framed it for the patients at my work. I will never be as smart in math as some people, or be able to play guitar as well as, well any famour guitarist, but everyone is good at something. It reminds me that just because I am not perfect at one thing, doesn't mean I can't excel at something else. And if I haven't found it yet, it just means I need to keep looking for it and trying new things.

I try to keep a positive attitude about things. Don't get me wrong, I have bad days. Times when I am upset. But I found staying happy and letting things roll off of me keeps the days going better, and keeps me feeling better and younger. What are quotes that you love? 30 Days Day 05- My Hometown

I actually live in my hometown still. I have never actually lived anywhere else for an extended period of time. St.Louians have a tendency to stay here. Not only stay here but if others want to move to a different city the main question is why? And instead of asking what college you went to, the question everybody from st.louis asks when they meet a new person is what high school did you go to? By knowing what high school the person went to, you knew what part of town they grew up in. St. Louis has over 100 different municipalities, each one having their own police deptartment, fire department, and city hall. For example, I went to Ritenour High School. One of my favorite parts of St.Louis is the Delmar Loop. I lived behind it for three years, and I still hang out there all the time.

30 Days Day 4- A Friend I Adore

Not many people can say they have been friends with their best friend for their whole life, but I am lucky enough to say I can. We were neighbors, and our parents were(and still are) good friends. For as long as I can remember, we have been friends. We haven't even had a major fight. (I better knock on wood now!).

"And in the moment, we were infanite"

What better what to introduce myself then sharing a quote from one of my favorite books? The quote in the title is from The Perks of Being a Wallfower. It of course now is out in theaters, and is a great movie. I was so upset that the movie was going to be ruined by producers or a crazy director. This quote is when the main charachter, Charlie, is riding in a car with Sam and Patrick and they are driving thru the tunnel, listening to music and Charlie is having a life changing moment. In that moment he was infinate. I always try to remember things when they are happening, just in case I am having an infinate moment, just like him. Today I had one ( I ran a half marathon today-more on that in a different post. Today is about introductions). I am a full time secretary, going to school and having crazy adventures in dating, being single, my cats Jack and Sam, and creating one jewelry on the side. This here below is me and a few of my favorite things:
